Stuffed Bell Pepper.

Bell peppers are one of my favourite vegetables! This was another simple, quick and easy recipe that I came up with because I was trying to prepare a balanced, fulling, vegetarian meal.


This can be a light dinner. It's so yummy.





Mixed vegetable benefits:

> can increase metabolism

> high dietary fibre

> keeps you full for longer

> heart healthy




Red beans and chick peas:

> High dietary fibre

> Good source of protein.























































Mozzarella cheese benefits:

> lower saturated fat

> Good source of protein

> Good for bone health





Ingredients:

  • 1 large bell pepper

  • 1 oz cheese

  • 1-2 cup vegetables (mushrooms, string beans, bell peppers, carrots, broccoli)

  • 1/2 cup corn

  • 1/4 cup red beans

  • 1/4 cup chick peas

  • seasonings (oregano, basil, parsley, onion, garlic, chive, pimento, and any seasoning you like)




Method:

Wash bell pepper, slice open the top and remove the seeds.


Cook beans together with seasonings and only add the frozen vegetables and corn when semi cooked.


Add mixture to bell pepper and top with grated cheese. Bake for 20 mins or until cooked. Slice open and enjoy.
