Mashed Plantain vegetarian mix


This was a super easy vegetarian one pot dish. Don't spend too much time standing in the kitchen. It's so delicious and sweet! I love it.


Must try this easy recipe.






Mixed vegetable benefits:

> can increase metabolism

> high dietary fibre

> keeps you full for longer

> heart healthy




Spinach leaves:

> High dietary fibre

> Good anti-inflammatory properties




Mozzarella cheese benefits:

> lower saturated fat

> Good source of protein

> Good for bone health



Plantain benefits:

> Good source of complex carbs.

> Good source of vitamin C





Ingredients:

  • 1 large plantain

  • 1 oz mozzarella cheese

  • 1-2 cup vegetables (spinach leaves, mushrooms, string beans, bell peppers, carrots, broccoli)

  • seasonings (oregano, basil, parsley, onion, garlic, chive, pimento, and any seasoning you like)




Method:

Boil plantain until cooked for about 10-15 minutes. Add vegetables and low fat cheese when close to completion with seasonings.


Enjoy when cool.
