Egg wrap


I created my own egg wrap recipe! This one is an easy vegetarian meal!


The changes that I made included using egg whites ONLY, a whole wheat wrap and a variety of colourful vegetables. Usually I would try multiple vegetarian recipes around this time because I fast for lent. This one provided a healthy balance for me to get my complex carbohydrates, protein and vegetable sources!



Egg white benefits:

- no cholesterol

- no fat

- low calories

- good protein source


















Whole wheat wrap:

- high dietary fibre

- can help to reduce blood sugar spikes

- can reduce the risk for chronic diseases


















Vegetables:

- positive effect on blood sugar levels

- high amounts of vitamins, minerals, and dietary fiber

- rich in antioxidant properties





















Ingredients:

  • 1 cup vegetables (carrot, tomato, onion, garlic, pimento, chive, celery, bell pepper, cabbage)

  • 1 whole wheat wrap

  • 2 egg whites

  • optional: mozzarella cheese


Method:

Wash and slice favourite vegetables. Separate egg whites and mix in vegetables. Cook in a non-stick frying pan. Toast whole wheat wrap and place the mixture into the wrap and fold to the side. You can add optional low fat mozzarella cheese. Enjoy.
