Cassava wedges, low fat cheese with spinach leaves


This has to be one of my top favourties! It tastes soooo good! I love cassava wedges and the best part is anyone can have this because it's vegetarian, vegan.


I usually prefer cassava wedges with cheese and spinach leaves!


Cassava benefits

- high dietary fibre

Spinach leaves benefits:

- high dietary fibre

- antioxidant properties

- health boosting

- vegetable





















Seasoning:

- flavour

- no salt






































Ingredients:

  • 1 cassava root(avg. 1-2 cups)

  • 1-2 oz. vegetarian cheese

  • 1 cup spinach leaves

  • sprinkle onion, garlic, oregano, basil and parsley to season with chive and pimento

  • optional: pepper sauce and tomato sauce (from Didi's Recipe available under recipes)


Method:

Peel cassava and slice into 2 pieces. Add to boiling water and steam for about 10 minutes. Strain and slice into wedges. Bake with dry seasoning until cooked for about 15 minutes (can cover with foil). Enjoy with the rest of the spinach leaves and grated cheese.
