Black bean patty, sweet potato sandwich with spinach leaves


This has to be one of my top favourties! It tastes soooo good! I love sweet potato sandwiches and the best part is anyone can have this because it's vegetarian, vegan.


The patty is bean based and just blended and pan fried. The sweet potato slices I baked!




























Black bean benefits

Ingredients:

  • 2 sweet potato slices

  • 1/3 cup black beans

  • 2-3 tbsp. flaxseed

  • 1 cup spinach leaves

  • sprinkle onion, garlic, oregano, basil and parsley to season with chive and pimento

  • optional: pepper sauce and tomato sauce


Method:

Steam and slice sweet potato into circles. Bake with dry seasoning. Boil black beans/strain the tin black beans. Add seasoning and flaxseed. Blend. Pat together to make a patty and in a non-stick frying pan, steam on both sides (or use spray oil). Put sandwich together in layers. Start with the sweet potato slice, add the spinach leaves, patty and top with the other sweet potato slice. Enjoy with the rest of the spinach leaves!
